Healthy Whole Wheat Banana Nut Bread
Got this recipe from King Arthur Flour and made a couple substitutions. Unsweetened applesauce instead of butter and egg whites instead of whole eggs.
This recipe is delicious and only has 135 calories per slice! ;)

Mug Cakes!
Some people think that microwaving cakes in a mug is some sort of baking sin, but I find it kind of neat! I came across a list of various Mug Cake recipes while browsing on Tumblr today and decided to give one a try.
The one I made in the picture above is the Peanut Butter recipe. It wasn't as good as a cake baked in the oven, but definitely tasted better then I expected it to be! I ended up microwaving it for about 1 minute and 50 seconds even though the recipe said only 1 minute. It may be because my mug is larger and thicker than most mugs. I think these recipes would be something fun to do with kids. Give it a try! ;)

Nutella Brownies
Found this recipe and knew right away that I had to try it because I'm a big Nutella fan! Since I'm on a diet I decided to alter the recipe a bit by using healthier substitutions to make it a bit more "guilt free". Original recipe can be found here.
White flour --> Whole wheat flour
Eggs --> Egg whites
Butter --> Unsweetened applesauce
I was extremely pleased with the way these came out! So moist and flavorful! With the alterations I made to the recipe, each piece is about 170 calories.. not too bad!

"Peep Show" Smore Bars
Sometimes I bake more than just cakes..
I came across this idea from Bakeat350 and decided to try it right away since I knew that peeps were on clearance at the grocery store and wouldn't last much longer! I ran to the store and got the last 7 boxes they had left for 50% off! This is what I came up with :)
This is such a delicious treat and great mix on the traditional Smores. It's a bit messy to eat but who cares! ;)
